The start of elderberry season on our homestead…

The start of elderberry season on our homestead…

It’s wild out here, y’all… 🌿

…and we’re darn near elderberry season!

One of my favorite things about this time of year is wandering the trails around our homestead and spotting more and more elderberries turning ripe. Every walk seems to reveal another patch loaded down with berries, and I get just a little more excited each time.

The best part? We don’t have to rush! We have elderberries growing all over our property, so instead of one big harvest, we’ll be picking berries all through late summer and into early fall as different clusters ripen. It turns harvesting into a fun excuse to take another walk around the farm.

There’s something so rewarding about filling baskets with food that God provided right here on our own land. We’ll be preserving our harvest by freezing and dehydrating berries so we can enjoy them long after the season is over.

Elderberries have been treasured in traditional herbalism for generations and are packed with antioxidants. Around here they’ll eventually become all kinds of homemade goodies like:

• Elderberry syrup
• Elderberry gummies
• Herbal tea blends
• Tinctures
• Jams & jellies
• And maybe even a few new recipes we’re excited to try!

One of the things I love most about homesteading is learning to work with the seasons. It’s amazing how much nature provides when you slow down long enough to notice what’s growing around you.

Now tell me...are you team freeze, dehydrate, or straight into syrup? Or do you have another favorite way to preserve elderberries? I’d love to hear what everyone makes!

After some exposure therapy, I’m finally able to share the footage that followed the phone call no parent ever wants to hear: “THE HOUSE IS ON FIRE!”

On March 23, 2026, our family experienced every parent’s worst nightmare. What began as an ordinary family dinner just a few minutes away from home turned into a devastating house fire that changed our lives forever.

In this video, we’re sharing the terrifying moments from the night our home caught fire—from the frantic phone call from our 11-year-old son, to racing home not knowing if our children were safe, to watching firefighters battle the flames. We also share the heartbreaking loss of our beloved dog, Quinny, who had been part of our family for 13 years.

This isn’t just a story about loss. It’s about faith (because God is always good), family, courage, first responders, and finding hope in the middle of the toughest time.

If you’ve ever wondered what it’s really like to experience a house fire, or if you’re walking through a difficult season yourself, we hope our story reminds you that even in life’s darkest moments, you’re not alone. He is always with you 🙏🏻

If this video touches your heart, please consider subscribing to our YT channel @ Freedom Forest Farm as we continue sharing our family’s rebuilding journey, homestead life, and the blessings God continues to reveal along the way.

Thank you for watching and for keeping our family in your prayers 🫶🏼

Just another summer day on the homestead... and ye

Just another summer day on the homestead... and yes, my emu is back for his favorite “shower.” 🚿🦕😂

If you’ve followed along for a while, you know this isn’t Pember’s first rodeo with the water hose! On hot South Carolina days, he comes running when he sees the spray.

💧 Fun Emu Facts:
• Emus can swim and are surprisingly strong in the water.
• Emus regulate body temperature by panting and seeking shade during hot weather.
• Their unique double-shafted feathers provide insulation and help reduce heat reaching the skin.
• Emus are the second-largest living bird in the world and can run up to 30 mph.

Just one more reason life with farm animals is never boring. 🤎🌿

🌱 Me: just watering the garden.

🧠 My brain: “Activate your core. Engage your glutes. Lengthen your spine. Shoulders down. Head up. Breathe.”

At this point, Pilates is becoming the voice in my head. 😂

But honestly, one of the things that has surprised me most about starting Pilates is how quickly it’s carried over into everyday life. After only a few classes, I’ve caught myself naturally standing taller, sitting straighter, and engaging my core without even thinking about it.

Pilates isn’t just about what happens during a workout. It teaches body awareness, posture, balance, flexibility, core strength, and proper movement patterns that can benefit everything from gardening and homesteading chores to working at a desk or chasing kids around all day.

I’m still very much a beginner, but it’s been fun noticing these little changes already. 💚

Anyone else find themselves hearing their instructor’s voice in their head long after class is over? 😂

🌸 Harvesting the “Tree of Happiness” 🌸 “The best

🌸 Harvesting the “Tree of Happiness” 🌸

“The best medicine cabinet was planted by God long before we built our own.”

Yesterday, I foraged Mimosa tree flowers and bark to dry for teas and tinctures right here on our homestead. Known as the “Tree of Happiness,” Mimosa (Albizia julibrissin) has a long history of traditional use, particularly in Traditional Chinese Medicine.

After harvesting, I carefully removed the flower stems, cut the bark into smaller pieces, and spread everything onto drying trays to dehydrate. Drying helps preserve the plant material for long-term storage, reduces the risk of spoilage, and allows me to keep these botanicals on hand for future use throughout the year.

Once fully dried, I’ll use the flowers and bark to make herbal teas and tinctures. A tincture is a concentrated extract made by soaking plant material in alcohol to preserve and extract its natural compounds.

Traditionally, Mimosa flowers and bark have been used to support relaxation, emotional well-being, and a healthy response to occasional stress. While modern research on Mimosa is still limited, it remains a favorite among many herbalists and those interested in traditional plant-based remedies.

One reason I love learning about medicinal plants is that they remind me of God’s provision in nature. Long before pharmacies existed, people looked to the plants around them for food, comfort, and wellness. While natural remedies aren’t a replacement for professional medical care when it’s needed, many people appreciate them as a way to support overall well-being and maintain a closer connection to the land.

I couldn’t wait for everything to dry, so I saved a handful of fresh Mimosa blossoms and brewed a quick tea sweetened with a little local honey. There’s something special about sipping a cup of tea made from plants harvested just steps from your front door.

Homesteading has taught me that some of the most valuable things are often growing right in our own backyards.

Have you ever foraged Mimosa or used it in teas or tinctures? 🌿🌸

We were out foraging for wild lettuce around our homestead this evening and found this striking Dragon’s Head Lily growing near the hidden house driveway.

Isn’t it beautiful? I think I need to grow a whole garden bed of these now!

Every creation testifies to God’s existence!!! Can I get an Amen?!? 🙌
