How to Make DELICIOUS Homemade Dandelion Jelly

We have dandelions growing all over the place right now, so my daughter Charleigh (who is singing in the video below) and I foraged some. We made some tea, a salve and this delicious Dandelion Tea. It tastes like sunshine in a jar (honey with a hint of lemon). Youโ€™re going to want to try this! โ˜€๏ธ๐Ÿฏ๐Ÿ‹๐ŸŒผ

Dandelion is so much more than the weed most people think it is. Itโ€™s highly nutritious (from the roots all the way to the flower) and can be eaten cooked or raw. Dandelions contain potent antioxidants, may help fight inflammation, may aid in blood sugar management, reduce cholesterol and triglyceride levels, lower blood pressure and promote liver health. Itโ€™s also said to aid in weight loss, have potential anticancer effects, support healthy digestion, treat constipation and several other health benefits (read more at Healthline).

I found this Dandelion Jelly recipe by Kim over at Homestead Acres.

Itโ€™s so easy to make; collect dandelions, separate the petals from the stems, steep in hot water over night then strain to make Dandelion Tea. Bring 4 cups of the tea, 1 package of pectin, and 2 tbs lemon juice to a boil. Then add 4 cups sugar and bring to boil again for 1-2 min. Remove from heat and pour into sterilized canning jars. Process for 10 min in water bath (or according to your altitude). Let set overnight on kitchen counter, undisturbed to ensure jars are sealed.
