This 2-ingredient homemade Marshmallow Fluff recipe is easy, quick & delicious!

This deliciousness only calls for two ingredients… 1/2 cup maple syrup and 2 egg whites.

Skip the corn syrup and sugar with this recipe! It’s incredibly easy to make, only takes a few short minutes, and tastes so yummy! We make it in the mornings for the kids to put on their pancakes and waffles, and in our oatmeal. They love it in their hot chocolate, and I add some to my coffee. It also makes an excellent dip for fresh cut fruits! Its diverse uses make it an all-around family favorite in our house and I’m willing to bet it’ll quickly become a favorite in your house too!

Opting for our dairy-free Marshmallow Fluff over traditional Whipped Cream (made with heavy cream and confectioners’ sugar) is our choice to accommodate lactose-intolerant family members. Additionally, our preference for real maple syrup not only adds a delightful sweetness but also brings a boost of antioxidants to the table. Before we dive into how easy this is to make, it’s important to first know the difference between real maple syrup and fake maple syrup. Of course, this recipe will work just fine with either, but if your goal is a healthier option, you’ll want to keep reading.

Real maple syrup and fake maple syrup, often labeled as pancake syrup or maple-flavored syrup, differ significantly in both taste and composition. Authentic maple syrup is derived from the sap of sugar maple trees, which is collected and then boiled down to concentrate the sugars and develop its distinctive rich, complex flavor. The process is time-consuming and requires a large volume of sap, making real maple syrup a more expensive option.

In contrast, fake maple syrup is typically composed of corn syrup or other sweeteners, artificial flavorings, and additives. The imitation syrup lacks the depth and authenticity of real maple syrup, often tasting overly sweet with a less nuanced flavor profile. While real maple syrup is prized for its natural sweetness and regional variations, fake maple syrup tends to be a more cost-effective but less satisfying alternative that lacks the genuine essence of this beloved breakfast condiment.

When I am stocked up on organic maple syrup, I use that. But when I’m in a pinch and only have the grocery store pancake syrup, I’ll use that. It’s totally up to you and your preference.

Now that that’s out of the way, let’s get to the good stuff!

Bring 1/2 cup maple syrup to a boil then remove from heat. Whip 2 egg whites in your stand mixer until firm, then slowly drizzle in the maple syrup and continue whipping on high until fluffy (it takes a few minutes). It’s really that easy.
